If you also want to remove the currently specified OPTIONS, than also wipe /var/db/ports/ . man pkg_delete; and man ports will help you understand what are these command doing. I've been compiling everything with altivec for the past few months, with no problems, and I abuse the hell out of my system, so I can safely say that it's stable enough for release. There was Altivec in 7.2-RELEASE as well, and it is quite stable.
