I use a qmail, vpopmail (for POP3) and courier-imap combo and am very happy with the results. (I also have some other things like ssl and a web interface, but that appears to be more than you need/want.) I would look at www.qmail.org. I also translated a FreeBSD Qmail Howto from Oliver Lehmann. The original is in German at www.pofo.de and my translation starts at http://www.stevenfettig.com/article.php?sid=13 I've been trying to add comments to the translation as I have gone and added and changed things, but time is pretty valuable right now and this is as far as I have gotten so far.
