They're for new users that just want to "fire and forget." In fact, I don't even install gnome2-fifth-toe. I just pick the ports I want, and go. If you had to have a meta-port, it's best to create your own using gnome2[-fifth-toe] as a model, stick it in ports/x11, and always build that one.
