There are many book on the subject, But as in any operating systems, there is a learning curve. for more indepth information you should look over the technical details http://www.freebsd.org/doc/en_US.ISO8859-1/books/handbook/index.html As well as the port that are already in the ports tree that deal with VoIP http://www.freebsd.org/cgi/ports.cgi?query=VoIP&stype=all Each port has a maintainer, and Information, Sources, Changes, where you can download (and it's Dependencies), even the maintinaers contact information FreeBSD is a Roll your own OS, in most cases you have to recompile the OS to meet your needs, this requires a good working knowledge of the OS and it's interworkings.
