Actually, after I sent this out, I continued my searching and found it in
the ports/Mk/bsd.port.mk file ... stuff like the work directory and
DESTDIR ... should this be added, commented out, to
/etc/defaults/make.conf?  I find them to be useful in a multi-server
environment, but not well documented :(
