Jeff-

I'm going to bet that the delay you're seeing is due to the time to process a 
nameserver lookup (tcpdump will by default try to convert IP addresses found 
in packets to FQDNs).  If that's the case, you can eliminate the nameserver 
lookups by giving the -n flag or writing raw packets to a file with -w.  
(Check the manpage for more details.)
