Easy 'nuff: grab the `des' distribution from ftp.freebsd.org or CDROM, cd
to /, and type `cat des.* | tar xzf -' to extract. From then forward, all
new crypted passwords (and others) will be in DES. Plus, your old MD5
passwords will still be recognized.

The system-supplied des libs and such are internationalized and thus only
contain md5 code, even though it's called libdes. ;)
