With postfix (fast, and simpler to config the sendmail), when mail for an uknown domair arrives, postfix will query DNS to see if postfix's hostname is in the domain's MX list, if so postfix accepts the mail for relay and goes into it's standard MX delivery drill. Sort of a "smart MX" function. no maintenance of postfix required. Pb is, your postfix machine can be hijacked for MX backup by anybody who simply lists your postfix hostname in their MX records. The high maintenance but secure way is to list explicitly each domain to be MX-backed up in postfix's relay_domains.map file so the incoming mail gets accepted, and then list the next-hop hostname or ip in the postfix transport.map file.
