You snipped out everything useful.  The error messages at the end of the
build (before the recursive "Leaving directory" messages) are the
important part.

FWIW, gnome builds fine for me with -STABLE and XFree86 4.1.0.  Make
sure all the gnome dependencies are up to date (in case some were
previously installed).
