o Disable whatever is starting X (either in /etc/ttys or
  /usr/local/etc/rc.d).

o If there are any packages automatically started that use X,
  remove their startup from /usr/local/etc/rc.d.

o Kill any started X applications and the X server.

o Look in /var/db/pkg for any X-related packages and do a
  pkg_delete for them.

o rm -fr /usr/X11R6.

There may still be a few random files (.xinitrc and the like)
still floating around but they're small and harmless.
