This assumes that the replacement "sendmail" binary accepts the same options as the real sendmail. In particular the options that are used by default in the rc* files. This is not the case for qmail for example. (And there the normal use is not to start it with sendmail_enable="YES" but rather from its own start file under /usr/local/etc/rc.d/ after disabling sendmail with sendmail_enable="NO" (now "NONE"), which I think should be the standard behaviour for alternative MTAs.)
