Use IPFW & natd (part of the base install) for firewall/proxy/nat.
Unless you want a caching proxy for web pages, then use squid.
If you mean ssh (secure telent/ftp) it will be installed by default in
the base system if you install 4.2 or later.

I'd stick with just what you describe above and add things later if you
find you need them.

qmail is excellent, but I've found sendmail/qpopper to work very well
too.
