Here are a few lines from the alloywm port which do that sort of thing:

        ${FIND} ${WRKSRC} \( -name '*.in' -or -name configure \) -exec \
                ${PERL} -pi -e 's:bash:sh:g ; \
                s:gtk-config:${GTK_CONFIG}:g' {} \;
