Anecdotal evidence suggests that if you plan on having 128 MB of swap (for example) and you have two disks, it's better to have 2 64MB swap partitions, since the system spreads the load over the disks. I say "anecdotal" because I haven't seen any hard figures showing how much of an improvement this is. Doubtless they exist, but I don't know where.
