Other than the stock system, you need to add the pop server, and you
should have what you need.  Popper is in the ports (or packages) tree; 
make & install it, then enable it in /etc/inetd.conf.  You may also want
to grab poppassd so your users can change their passwords from remote.

Sendmail may require further configuration depending on your environment.
The O'Reilly 'sendmail' book is the definitive reference, I suggest buying
it if you find the default config unsatisfactory.  

While you're mucking around in inetd.conf, you can disable the services
this machine won't be using.

Of course, all of this is highly dependent upon your network configuration
and personal preferences.
