You can achieve this by the Depth keyword in the Screen->Display
section of /etc/XF86Config.

If you make it the only entry you force the server to choose this
setting - provided the on board memory amount and hardware (DAC) 
support it.

I believe there is also a command line option for the X server
to choose the visual.
