My personal preference:

gregw@localhost:~$ cat /etc/make.conf | egrep -i mail
NO_SENDMAIL=	true	# do not build sendmail and related programs
NO_MAILWRAPPER=	true	# Don't build mailwrapper either. ;)

and simply set it the way I want the one time.
