I don't think that will help.  What you're seeing is xmms linking
against esound because it's installed.  If you put back in
WITHOUT_ESOUND, that won't change that behavior.  The port just needs to
be updated to include the --disable-esd option to make sure esound
support isn't included even when esd is present on the system.
