Look at /usr/ports/Mk/bsd.port.mk; in particular WRKDIRPREFIX.

Setting it in /etc/make.conf seems sensible, perhaps
WRKDIRPREFIX=/usr/ports/`hostname` 
or
WRKDIRPREFIX=/disks/big-fast-disk/ports-build

as approprate
