But that looks identical to what the installer generates when using an
encrypted pool:

backup-4:~:% zpool get bootfs=20
NAME      PROPERTY  VALUE               SOURCE
bootpool  bootfs    -                   default
zroot     bootfs    zroot/ROOT/default  local

'bootpool' contains the unencrypted kernel we want to boot from, but zroot=
=20
has the (encrypted) root filesystem.
