The easiest way to tell is to telnet to the smtp port of the machine:

bash$ telnet horton 25
Trying 204.147.87.98...
Connected to horton.iaces.com.
Escape character is '^]'.
220 horton.iaces.com ESMTP Sendmail 8.8.7/8.8.7; Thu, 23 Oct 1997 18:56:25 -050)
                                    ^^^^^^^^^^^
The first number is the version of sendmail running. The second is the
version used to create the sendmail.cf file. (I've updated mine).
