Can't help you with sound, but there are a couple of touch screen
manufacturers I've used extensively for many years: Crestron at
http://www.crestron.com/ and Panja, nee AMX, at http://www.amx.com/. 
Before you even look, I'll volunteer that they are both probably not
quite what you want. You could also try MicroTouch
(http://www.microtouch.com/); I used their products once several years
ago, and they seemed to work well. They do a lot of OEM stuff for kiosks
etc. They have touch monitors and also touch kits for retrofitting an
existing monitor.
