Both ways work fine. As long as you run a buildworld before
[build|install]kernel, everything should work. Which is more advisable
is just personal preference. There are some people who want to make sure
the new kernel boots & doesn't kill any hardware before updating their
userland, so they would probably [build|install]kernel, make sure
everything's OK, then installworld. If you don't care about this (for
example, you're running on a relatively expendable box), then you could
just make installworld && make buildkernel KERNEL=FOO && make
installkernel KERNEL=FOO.
