Yes, you don't have to fully-populate the cards.

The Maxtors are *much* better drives.  Don't mix drive types unless you 
absolutely have to; the optimisation that the 3ware controller performs 
will be largely defeated by this.

Setup for these controllers is OS-neutral; you do it with the BIOS.
