You can start x with the command "startx". (intuitive, ehh?)
/usr/X11R6/bin needs to be in your path. (check .profile for your path)
My favorite editor (my favorite, I happen to like it) is emacs and xemacs.
It isn't all that easy to use at first, but it is designed to be readily
learnable. If you want a REALLY easy editor, use ee (easy editor). 
You can use XDM to start X automagically, but I am about to try
configuring that and can't help you there. 8-)
