Well, not really.  .cf files are still .cf files but most people don't use them directly (except old farts ;-)).  .mc files are the easiest way to configure sendmail (and of course tables)

Yes.  You get tables for everything as well but it is IMHO cleaner.

dovecot is the one I found the easiest to work with.

Don't use it so I can't advise.

clamav-milter along with milter-greylist rocks.  Spam filtering is more done at the user level through bogofilter though.
