People will swear by (and at!)

   sendmail
   qmail
   postfix

Take your pick -- reasonable people will disagree.

I've no experince with postfix, but I've heard good things about it.
qmail seems pretty high-performance to me (if you use spool hashing and
Maildir format), and sendmail, we'll, it's sendmail.
