No MTA shipped in this day and age should have relaying
enabled by default. It should have to be specifically enabled.
(In Sendmail, this is the access table; in Postfix, this is
"mynetworks", I can only speak for the mailers I remember
how to use :-)

Exim is used by a number of high-profile sites.

The great thing is, these days there is a good choice of
MTAs in the ports collection, so it's not too hard to try them
all out.

I like Postfix - if you compare unmodified releases (rather than
patched versions), it's more tolerant of badly-written clients than
qmail (though less tolerant than Sendmail).
