  Both.
  A "mail server" usually runs two applications: an MTA such as sendmail
(using SMTP) and a server for users; POP3 and IMAP are two protocols
users-side.
  In a few words, POP3 is more client-oriented (more tasks accomplished by
clients), IMAP is more server-oriented. You have to choose by yourself, but
be aware to check the software you want to use in clients; almost
everything supports POP3 whereas it's not the same for IMAP.
  Personally, I'm happy running qpopper (POP3).
