I built a kernel with the "-g" option to config and installed it per the kernel debugging guide of the handbook, and now the server hasn't crashed in over two weeks (fingers crossed!). Perhaps I somehow corrupted the original kernel when I copied it between disks, or perhaps a few fsck's fixed the problematic partition. Thank you to everyone who replied with suggestions!
