Greetings,

Perhaps those who have a different perference then the choices
made by the FreeBSD developers should read up on the
various NO_xxx settings that are can be used in /etc/make.conf
for the purpose to not building the software that you do not want.
(and also prevent overwriting your favourite software that
you choose to install in base)

In addition, you can also choose add a refuse file in /usr/sup/src-all/
to NOT cvsup those sendmail/bind/kerberos/... source code
that you do not intend to build anyway. Do be careful of
  dependencies though.

With the above in consideration, removing sendmail/bind/whatever/....
is a one time effort, and it will stays that way.
There are ways for you to customise your system, and ensure that
it stays that way even when you upgrade (via cvsup).

Regards,
/calvin
