Ok, I'll try to keep this simple :-)

-CURRENT is the development branch
-STABLE is the "production" branch
-RELEASE is a snapshot of the -STABLE branch at release time

To answer your question, the way that'll give the least headaches is to 
install -RELEASE then upgrade via make world (see the handbook) to 
-STABLE.
