I too would reccomend qmail.  Try http://www.lifewithqmail.org/ for a 
newbie step by step setup.

If you use Matt Simerson's toaster instructions (as per a prior post), 
don't use the new beta instructions, as there are still some issues with 
Mozilla / Netscape authentication for the clients.
