If you chose custom, nothing goes in your face because the assumption is that you know what you're doing and will select such options *explicitly* through the post-configuration menus (where they do indeed exist if you look). Custom is for people who don't want anything in their face, they know exactly what they're doing and exactly what sysinstall is capable of at any given time.
