There are a number of tools that capture to .wav or .pcm. At least one will send the results to standard out, so you could feed that to an encoder. I haven't done it, so I'm not sure it'll work. Whether or not it can keep up with you will depend on your hardware. As for whether or not that card will work, I recommend asking on -multimedia. Recording audio is one of the weak spots in FreeBSD at the moment.
