Head directly for the FreeBSD handbook:  http://www.freebsd.org/handbook

It depends on what services you want to offer, exactly .. for most people,
installing qpopper and using the stock sendmail covers it for mail.  For
proxy, do you want to do SOCKS, NAT, ???
