Ok, figured it out, the following works as a simple make install (IMHO), 
should:

make WITH_X11=yes WITH_GTK2=yes WITH_GNOME2=yes install

Given that there also exist the tethereal and -lite ports, shouldn't the 
"ethereal" port build with those options by default?
