dig through /etc/defaults/make.conf. there's an entire section of base
install OS bits to not build, and not install.

one of them happens to be sendmail.

	# To avoid building various parts of the base system:

	[snippage for space]

	#NO_SENDMAIL=   true    # do not build sendmail and related programs

it just so happens that you can override this quite easily.
