Tom Evans pointed out to me that this is not the case -- Apache defaults
to using "EnableMMAP On" and "EnableSendfile On", despite the
commented-out defaults in the stock httpd.conf file saying "Off".

So to clarify: I was wrong; disabling sendfile is something you have to
do administratively.
