Find the "Modes" line in the "Screen" section.  It'll look something
like:
    Modes       "640x480" "800x600" "1024x768"

It tries the modes in order, so just swap 'em around so the 1024x768 one
is first.  (Yup, bloody stupid system, that it puts the LOWEST first in
the configurator)
