There now is a pieeprom-2021-04-29.bin that is the newest stable
(critical) release and also the new manufacturing release.

It does not appear that:

https://github.com/raspberrypi/rpi-eeprom/blob/master/releases.md

has been updated to track yet: it still lists the
2020-09-03 image as the default and so is now a
couple of releases behind.
