One more way (i use it on my PC):

DISTDIR=/arc/dist                  # all distfiles store
WRKDIRPREFIX=/tmp                  # i have pretty large root fs ;-)
WRKDIR=$(WRKDIRPREFIX)/$(PORTNAME) # simply decrease number of subdirs

Of course, my /usr/src & /usr/ports mounted from NFS-server.
