Ah, I can ignore the old versions by making MergeChanges in 
/etc/freebsd-update.conf contain very little, if anything.

This greatly reduces the manual labour!

That plus making Components in freebsd-update.conf only contain 
kernel/generic and world/base and I reckon that'll about do it.
