fix plist issue

Previously math/vtk6 had a plist issue
```

as it rm'ed `${STAGEDIR}${PREFIX}/share/cmake/hdf5/libhdf5.settings` but not
the directory containing it.

Rather than rm'ing that file, simply make cmake not even install it.
