As I said, the US layout is the default. You need to choose
the german layout in the installer; "bsdinstall" can also be
used to set the keyboard layout of the _installed_ version,
or you simply add 

	keymap="german.iso.kbd"

to the /etc/rc.conf file. You can use the interactive keyboard
map chooser

	# kbdmap

as well. It's similar to what bsdinstall can do.

Yes, lynx (or other text mode browsers like links or w3m) can
be used for testing.

You can boot from USB as often as you want. However, it would
probably be better if you fixed your GRUB settings and have
your installed system booting.

It would have been nice if you would have presented the output
of this command (or at least the result of "ifconfig -a" which
should contain all relevant information).
