In a nutshell, the apache port version you're building depends on openssl
0.9.7, which is not in the base system for -stable.

postgresql doesn't depend on 0.9.7, it's happy with the openssl included
with the base system (0.9.6?)

Simple as that.  If you try to built a port (or any other software) that
requires 0.9.7, you'll need to have 0.9.7 installed.
