Alright so it looks like you just went with the defaults. What's the 
issue in single user mode? Is it that you cannot write to the drives or 
that they do not mount?

If they do not mount, do a "zfs mount -a" and that should mount them.  
You will also need to do "mount -u /" so you can write to the 
filesystem. You can also do "zfs set readonly=off tank" which may work 
better for you since you have a lot of datasets. I can vouch for that 
method, I don't normally use mount -u /.
