As one who has done ( am still doing ) what you are looking for I suggest that the best way is to purchase the FreeBSD handbook ( or if you don't mind reading it over the web get the good oil there ) and go through the chapters one by one and learn to install/config a DHCP server Web server FTP server etc etc. All the books dedicated to Sys Admin work appear to be pretty tedious I thought and the best way is hands on playing with things with the books as a guide only. Take any old piece of garbage machine with a cheap hub and a second "client" machine and go for it. It can be fun when things are working the way you intended.
