Yes, but you need to understand the risks.  For instance, if you install
your new kernel and reboot, you may not have a firewall until after the
installworld and another reboot if the format changed.  If your server
doesn't provide any services with breakable userland/kernel interactions
then buildworld, buildkernel, installkernel, reboot, installworld,
mergemaster, reboot is probably fairly safe and will minimize downtime.
