Next scenario:

If I run

iperf -c hal -b 500m,0

i.e., using only 50% of the available bandwidth between the laptop and the
third machine, NFS read performance between the laptop and the second machi=
ne
increases to 5..7 MBps, i.e., 50..70% of the available bandwidth of 100 Mbp=
s.

It seems that in this case there is sufficient but not too much activity on=
 em0
in order to optimally talk to the second machine.

Maybe this is a case of lost or stuck interrupts? Or some problems with
handling UDP?
